De Watère was founded in 2011 by Martin A. Konorza to discover the true soul of champagne and to create a completely new way of enjoying champagne.
TEN21 serves as the entry to the world of De Watère, consciously providing an elevated experience of traditional Champagne crafting. Prestige Brut Blanc then shows what a Blanc Champagne can offer as the perfect blend of freshness, maturity and strength in taste by being as light on the tongue as Champagne should be. Finally, as the crown jewel, Prestige Brut Rosé de Saignée demonstrates what a Champagne should be. Mind-boggingly complex and strong in its aromas, yet light as silk on the tongue.
Our luxury champagnes are being produced exclusively from the Cuvée in the Premier Cru village of Avenay Val d'Or in the Vallée de la Marne, Champagne, France.
The proud Gryphon Theodore serves as the guardian of special moments and our strong values. He makes sure that we keep everything tidy around here, too.
The name "De Watère" and its symbol, the gryphon Theodore, are a tribute to Konorza's French ancestors. The family's roots go back further than those of the Champagne itself: as the first documented ancestor under the name, a Frenchman, can be found in the Domesday Book in England in 1,086. This long family history of nearly a thousand years serves as an inspiration to live up to this long tradition with upright and decent action.
The champagnes that proudly bear the gryphon come from the Vallée de la Marne, France. The sustainably managed Premier Cru vineyards offer the perfect conditions for growing first-class grapes: the climate in Champagne allows the grapes to reach their full maturity potential, which in turn brings out the freshness, finesse and strength of aromas of the luxurious champagnes from De Watère.
At the heart of De Watère stands that we turned the accepted production approach on its head. Instead of forcing the grape in a pre-defined flavour profile, we ask the grape what it needs to realise its full potential.
Following this respectful approach, we employ manual labour as much as possible during the entire production process. From horses in the vineyard instead of heavy emission-emitting tractors, over manual rattling and disgorgement to even having our gift boxes crafted by hand. Yes, also in our partners we look for the same passion for respectful crafting instead of anonymous mass production.
Constantly in pursuit of the true soul of Champagne, we hand make limited production Premier Cru Champagnes from the Cuvée of pure grapes that are as close as possible to the purity of the original Champagnes when they became world famous: before the brutal industrial mass production.
One key aspect is our care and respect for our Champagnes. We give them all the time they need to develop in 2,000 year-old caves under the hills of the Vallée de la Marne - until they're ready to show the world what Champagne is capable of in terms of aromas, liveliness and strength..
The resulting Champagnes entice into a story of happy moments, tickling the taste buds into unknown territory - tasting as pure, aromatic and elegant as we wished all Champagnes did.
We devote all our attention to every detail of the crafting process. Our highest guiding principle is to support the grape in everything it needs to grow and later fully demonstrate its potential in every sip of De Watère.
Our entire approach and the resulting processes turned traditional truths on its head. We are proud to say that this is not only evidently the right path by many happy customers around the world but also by numerous medals from the most prestigious tasting competitions.
We see the label "highest quality" as simply self-evident, therefore our starting point into a new realm, guided by the quest for what Champagne as a mythical idea should convey in your glass.
Our open-minded thinking always on the lookout for yet less invasive crafting methods, does not stop in the vineyard. We carry this mindset over to all our activities.
As well as focusing on this single goal in the vineyard, we let our product design follow the same laser focus with its minimalist features. All that's needed is there, nothing more. This allows us to focus even more on crafting what our customers know as the expression of Champagne.
